granny's spoonbread
Do NOT use cornmeal mix as it has flour in it. Sometimes I mix in crumbled bacon and cheddar cheese before pouring into skillet.

- 1 cup cornmeal (stone ground)
- 2 cups water
- 1 1/2 teaspoons salt
- 2 large eggs, beaten
- 1 cup milk
- 3 tablespoons bacon drippings
How To Make granny's spoonbread

Step 1Turn oven on to 375 degrees. Brush 8 - 10 inch cast iron skillet with alittle of the bacon grease (drippings)and put skillet into oven so it can preheat.

Step 2Meanwhile, in med. pot, add water, salt, and cornmeal and bring to boil.Cook 5 minutes stirring constantly. Remove from heat.

Step 3In medium bowl beat eggs, add milk and bacon grease and mix. Add this slowly to cornmeal mixture mixing well. ( this is when you can add cheese and crumbled bacon if desired) Pour into the preheated skillet and bake 45 - 50 minutes. Serve hot, with lots of butter!
