Ingredients

3 - eggs
2 1/2 cups sugar
1 cup cooking oil
3 teaspoons vanilla
2 cups zucchini, grated
1 1/2 teaspoons soda
1 1/2 teaspoons cinnamon
1 teaspoon salt
1/2 teaspoon baking powder
3 cups flour
1 cup pecans, chopped

How To Make easy zucchini bread

Step 1

Combine all ingredients except pecans in mixing bowl. Beat well at medium speed of electric mixer. Stir in nuts with a spoon. Turn into loaf pan . Bake at 325 degrees for 1 hour, or until bread tests done. Cool in pan for 10 minutes. Turn out on rack. Makes 1 loaf.
