Makes 1 loaf
Ingredients
- 3 - eggs
- 2 1/2 cups sugar
- 1 cup cooking oil
- 3 teaspoons vanilla
- 2 cups zucchini, grated
- 1 1/2 teaspoons soda
- 1 1/2 teaspoons cinnamon
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 3 cups flour
- 1 cup pecans, chopped
How To Make easy zucchini bread

Step 1Combine all ingredients except pecans in mixing bowl. Beat well at medium speed of electric mixer. Stir in nuts with a spoon. Turn into loaf pan . Bake at 325 degrees for 1 hour, or until bread tests done. Cool in pan for 10 minutes. Turn out on rack. Makes 1 loaf.
