Having grown up in the South, cornbread was a staple. To me, this recipe is a lighter version. To spice it up a bit, add shredded extra sharp cheddar cheese and diced jalapeno peppers.

Ingredients

  • 1 cup self-rising cornmeal
  • 2 - eggs, slightly beaten
  • 1/2 cup vegetable oil
  • 1 can cream-style corn (8 ounces)
  • 1 cup sour cream

How To Make corny cornbread

  • Step 1
    Preheat oven to 425 degrees. Heat cast iron skillet in oven for about 5-7 minutes.
  • Step 2
    Mix cornmeal, eggs, vegetable oil and corn in medium bowl. FOLD IN sour cream.
  • Step 3
    Remove skillet from oven and spray well with non-stick cooking spray. Add batter and cook for about 30 minutes or until golden brown.
