Having grown up in the South, cornbread was a staple. To me, this recipe is a lighter version. To spice it up a bit, add shredded extra sharp cheddar cheese and diced jalapeno peppers.

- 1 cup self-rising cornmeal
- 2 - eggs, slightly beaten
- 1/2 cup vegetable oil
- 1 can cream-style corn (8 ounces)
- 1 cup sour cream
How To Make corny cornbread

Step 1Preheat oven to 425 degrees. Heat cast iron skillet in oven for about 5-7 minutes.

Step 2Mix cornmeal, eggs, vegetable oil and corn in medium bowl. FOLD IN sour cream.

Step 3Remove skillet from oven and spray well with non-stick cooking spray. Add batter and cook for about 30 minutes or until golden brown.
