Ingredients

  • 1/2 pound ground chuck
  • 1 tablespoon yellow cornmeal
  • 1 cup self-rising yellow cornmeal
  • 1 cup milk
  • 1 can (17 oz) cream style corn
  • 2 large eggs, beaten
  • 1/4 cup vegetable oil
  • 1 large onion, finely chopped
  • 2-4 - jalapeno peppers, seeded and chopped
  • 2 cups cheddar cheese, shredded

How To Make cheesy beef cornbread

  • Step 1
    Cook bround chuck until browned, drain and set aside.
  • Step 2
    Sprinkle 1 tablespoon cornmeal in the bottom of a well-greased cast iron skillet. Cook over medium heat until lightly browned.
  • Step 3
    In a separate bowl, combine the self-rising cornmeal, milk, corn, eggs, and vegetable oil. Pour half of this mixture into the skillt wih the browned cornmeal.
  • Step 4
    Sprinkle ground chuck, onion, jalapeno peppers and shredded cheese on top. Top with remaining batter.
  • Step 5
    Bake at 350 degrees for 50-55 minutes or until golden brown.
