My friend/neighbor shared this recipe with me a very long time ago and I have been making it since. I love it so much that I have had it for breakfast when it was leftover. I hope that you try it.

Ingredients
- 1/2 cup melted marg.
- 3/4 cup green peppers chopped
- 1/3 cup onion chopped
- 1 - 17 oz. can corn (do not drain)
- 1 - 1 17 oz. cream corn
- 3 - beaten eggs
- 1 - 8 1/2 oz. corn muffin mix
- 1 cup shredded cheese
How To Make charlotte's corn casserole

Step 1Mix all ingredients together and add to an 8x8 greased baking dish. Bake 350 for 1 hour. That's it. Enjoy!
