My friend/neighbor shared this recipe with me a very long time ago and I have been making it since. I love it so much that I have had it for breakfast when it was leftover.

    melted marg.
  • 3/4 c
    green peppers chopped
  • 1/3 c
    onion chopped
  • 1
    17 oz. can corn (do not drain)
  • 1
    1 17 oz. cream corn
  • 3
    beaten eggs
  • 1
    8 1/2 oz. corn muffin mix
  • 1 c
    shredded cheese

How to Make Charlotte's Corn Casserole


  1. Mix all ingredients together and add to an 8x8 greased baking dish. Bake 350 for 1 hour. That's it. Enjoy!
