I've been asking my aunt Shirley for the recipe for her moist zucchini bread forever, she finally gave it to me, yeah!

Ingredients

2 c
all purpose flour
1 c
whole wheat flour
1 tsp
salt
1 tsp
baking soda
1 tsp
baking powder
3 tsp
cinnamon
3 large
eggs
1 c
canola oil
2-1/4 c
sugar
3 tsp
vanilla
2 c
grated zucchini
1 c
chopped walnuts

Step-By-Step

1Heat oven to 325. Spray 2- 8" x 4" loaf pans w/ cooking spray. In bowl, sift together flours, salt, baking soda, baking powder and cinnamon. In another bowl, beat eggs, oil, vanilla and sugar.
2Add flour mix to egg mix. Beat until creamy. Stir in zucchini and walnuts. Pour batter evenly into pans.
3Bake 40 min, or until a toothpick inserted in center comes out clean. Cool. Remove bread from pans and cool completely.
