I've been asking my aunt Shirley for the recipe for her moist zucchini bread forever, she finally gave it to me, yeah!

Ingredients

  • 2 cups all purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons cinnamon
  • 3 large eggs
  • 1 cup canola oil
  • 2-1/4 cup sugar
  • 3 teaspoons vanilla
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

How To Make auntie shirley's zucchini bread

  • Step 1
    Heat oven to 325. Spray 2- 8" x 4" loaf pans w/ cooking spray. In bowl, sift together flours, salt, baking soda, baking powder and cinnamon. In another bowl, beat eggs, oil, vanilla and sugar.
  • Step 2
    Add flour mix to egg mix. Beat until creamy. Stir in zucchini and walnuts. Pour batter evenly into pans.
  • Step 3
    Bake 40 min, or until a toothpick inserted in center comes out clean. Cool. Remove bread from pans and cool completely.
