Vi says this is "Her best bread recipe!" When my kids were growing up we often visited Vi. She has a large farm kitchen and she always had something baking. This is one of our family favorites... It never lasts long!

Ingredients

  • 2 packages yeast
  • 1/2 cup warm water (105-110 degrees)
  • 2 cups boiling water
  • 2 teaspoons salt
  • 1/2 cup molasses
  • 1/4 cup honey
  • 1/3 cup butter
  • 2 cups rye flour
  • 5 cups all purpose flour

How To Make aunt viola's swedish rye bread

  • Step 1
    Mix yeast with 1/2 cup warm water. Set aside.
  • Step 2
    Bring 2 cups water to a boil. Then add: salt, molasses, honey,butter and rye flour, mix well by hand.
  • Step 3
    When cool enough, add yeast mixture. Let set a couple of minutes, then add 5 cups all purpose flour. Mix well. Knead 6-8 minutes or until dough is soft and pliable. Place in a greased bowl and cover. Let rise until double. Punch dough down.
  • Step 4
    Cut dough in two, shape each half into rounds and place on greased baking sheet. Let rise until double.
  • Step 5
    Bake in a 350 degree oven for 20-25 minutes or until golden. Remove from oven and cool.
