Ok, summer is here and we need to use our fresh veggies we grow in our gardens, soo this zucchini muffin recipe will help to use some of them. Also I have zucchini sandwich recipe posted !

    shredded zuchini
  • 3/4 c
  • 1 Tbsp
    baking powder
  • 1 tsp
  • 1 tsp
  • 1 c
  • 1/2 c

    quick cooking oats

How to Make Zucchini Oatmeal Muffins


  1. Bake in 400 degree oven for 25 minutes.
  2. In a large bowl/ beat eggs with fork/ stir in zucchini and oil / stir in rest of ingredients. Just stir DO NOT over mix.
