Ingredients
- 3 large eggs
- 1 cup salad oil
- 1 cup sugar
- 1 cup brown sugar
- 2 cups zucchini squash, peeled and grated,
- 2 1/2 cups sifted flour
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 2 1/2 teaspoons cinnamon
- 3 teaspoons vanilla extract
- 1 cup nuts, chopped

Step 1Beat eggs, add sugar, oil and zucchini.

Step 2Sift dry ingredients together and add to above mixture.

Step 3Add vanilla and nuts

Step 4Pour into greased loaf pan

Step 5Bake at 350 degrees for 1 hour.

Step 6Makes 2 loaves.

Step 7NOTES: When I make mine I don't peel the zucchini and I finely shred it. I also squeeze some of the liquid out before adding it.
