Ingredients

  • 3 large
    eggs
  • 1 c
    salad oil
  • 1 c
    sugar
  • 1 c
    brown sugar
  • 2 c
    zucchini squash, peeled and grated,
  • 2 1/2 c
    sifted flour
  • 1/4 tsp
    baking soda
  • 1 tsp
    salt
  • 2 1/2 tsp
    cinnamon
  • 3 tsp
    vanilla extract
  • 1 c
    nuts, chopped

How to Make ZUCCHINI BREAD MY MOM'S RECIPE

Step-by-Step

  1. Beat eggs, add sugar, oil and zucchini.
  2. Sift dry ingredients together and add to above mixture.
  3. Add vanilla and nuts
  4. Pour into greased loaf pan
  5. Bake at 350 degrees for 1 hour.
  6. Makes 2 loaves.
  7. NOTES: When I make mine I don't peel the zucchini and I finely shred it. I also squeeze some of the liquid out before adding it.
