Ingredients

  • 3 large eggs
  • 1 cup salad oil
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 cups zucchini squash, peeled and grated,
  • 2 1/2 cups sifted flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/2 teaspoons cinnamon
  • 3 teaspoons vanilla extract
  • 1 cup nuts, chopped

How To Make zucchini bread my mom's recipe

  • Step 1
    Beat eggs, add sugar, oil and zucchini.
  • Step 2
    Sift dry ingredients together and add to above mixture.
  • Step 3
    Add vanilla and nuts
  • Step 4
    Pour into greased loaf pan
  • Step 5
    Bake at 350 degrees for 1 hour.
  • Step 6
    Makes 2 loaves.
  • Step 7
    NOTES: When I make mine I don't peel the zucchini and I finely shred it. I also squeeze some of the liquid out before adding it.
