My mother loves zucchini bread she used to make this pretty often, anytime we had zucchini in the garden that's what she'd make.

Ingredients
- 3 cups sugar
- 3 - eggs
- 2 cups unpeeled grated zucchini
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 cup shortening
- 3 cups flour
- 3 teaspoons vanilla extract
- 1 teaspoon salt
- 1/4 teaspoon baking powder
How To Make zucchini bread

Step 1Cream together shortening and eggs, add vanilla and zucchini.

Step 2Blend dry ingredients and add creamed mixture.

Step 3Spread in well greased loaf pan. Bake 350° for 50-60 minutes.
