zucchini bread

I know there are alot of Zucchini Bread recipes out there but this is the only one I ever use. It was a recipe that my Grandmother used. I do change it up by adding chocolate chips to it. My grandgirlies love it!

Ingredients
- 3 - eggs
- 2 cups sugar
- 1 cup vegetable oil
- 2 cups raw zucchini, grated, ground or blended
- 3 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3 teaspoons cinnamon
- 2 teaspoons nutmeg
- 1 cup chopped nuts (if desired)
How To Make zucchini bread

Step 1Beat eggs until light and foamy.

Step 2Add sugar, oil, zucchini and vanilla.

Step 3Mix lightly but well.

Step 4Combine salt, soda, baking powder, flour, cinnamon and nutmeg.

Step 5Add to egg mixture. Stir until well blended. Add nuts.

Step 6Pour into two 9"x5" pans. Bake at 350 degrees for one hour. Cool on rack.
