I know there are alot of Zucchini Bread recipes out there but this is the only one I ever use. It was a recipe that my Grandmother used. I do change it up by adding chocolate chips to it. My grandgirlies love it!

vegetable oil
2 c
raw zucchini, grated, ground or blended
3 tsp
3 c
1 tsp
1 tsp
baking soda
1/4 tsp
baking powder
3 tsp
2 tsp
1 c
chopped nuts (if desired)

How to Make Zucchini Bread


  • 1Beat eggs until light and foamy.
  • 2Add sugar, oil, zucchini and vanilla.
  • 3Mix lightly but well.
  • 4Combine salt, soda, baking powder, flour, cinnamon and nutmeg.
  • 5Add to egg mixture. Stir until well blended. Add nuts.
  • 6Pour into two 9"x5" pans. Bake at 350 degrees for one hour. Cool on rack.
