This recipe is from the Columbus, GA newspaper. We nearly wore out the waffle iron as we had them every sunday for years!

Ingredients

  • 3 - eggs, separated
  • 1 1/2 cups buttermilk
  • 1 teaspoon baking soda ( stir into the buttermilk)
  • 1 3/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup melted crisco

How To Make waffles - so good that we had to have them every sunday for years!

  • Step 1
    Combine the egg yolks, and the buttermilk/soda mixture. Sometimes I added a tsp orange zest. In another bowl, combine the flour, baking powder and salt. Mix well. Then add the melted Crisco and the dry ingredients to the wet mixture. Stir until mixed.
  • Step 2
    Whip the egg whites till they hold their peaks well. Gently fold into the batter. Bake on waffle iron. With this batter it is easy to tell when the waffle is done, as the batter raises the top half of the waffle iron and slowly lets it back down as it is baked.
