Ingredients
- 4 - loaves day-old bread
- 6 to 8 medium tomatoes, peeled
- - salt, pepper, and red pepper to taste
- - mayonnaise
- 1 - onion, grated with juice
How To Make tomato sandwiches

Step 1Current bread with a biscuit cutter into 72 rounds.

Step 2Slice tomatoes thinly.

Step 3Place slices on double sheets of paper towels to drain.

Step 4Salt and pepper the tomato slices.

Step 5Spread mayonnaise on the bread rounds.

Step 6Place well-drained tomato slices on half of the rounds.

Step 7Sprinkle half a teaspoon of onion with juice over each tomato.

Step 8Top with remaining bread rounds.

Step 9To store until serving time, place on cookie sheet with wax paper between layers.

Step 10Cover tightly and store in the refrigerator.
