I received this recipe from a tomato stand at my local farmers market.

    loaves day-old bread
  • 6 to 8 medium
    tomatoes, peeled
  • ·
    salt, pepper, and red pepper to taste
  • ·
  • 1
    onion, grated with juice

How to Make Tomato Sandwiches


  1. Current bread with a biscuit cutter into 72 rounds.
  2. Slice tomatoes thinly.
  3. Place slices on double sheets of paper towels to drain.
  4. Salt and pepper the tomato slices.
  5. Spread mayonnaise on the bread rounds.
  6. Place well-drained tomato slices on half of the rounds.
  7. Sprinkle half a teaspoon of onion with juice over each tomato.
  8. Top with remaining bread rounds.
  9. To store until serving time, place on cookie sheet with wax paper between layers.
  10. Cover tightly and store in the refrigerator.
