I received this recipe from a tomato stand at my local farmers market.

Ingredients

  • 4 - loaves day-old bread
  • 6 to 8 medium tomatoes, peeled
  • - salt, pepper, and red pepper to taste
  • - mayonnaise
  • 1 - onion, grated with juice

How To Make tomato sandwiches

  • Step 1
    Current bread with a biscuit cutter into 72 rounds.
  • Step 2
    Slice tomatoes thinly.
  • Step 3
    Place slices on double sheets of paper towels to drain.
  • Step 4
    Salt and pepper the tomato slices.
  • Step 5
    Spread mayonnaise on the bread rounds.
  • Step 6
    Place well-drained tomato slices on half of the rounds.
  • Step 7
    Sprinkle half a teaspoon of onion with juice over each tomato.
  • Step 8
    Top with remaining bread rounds.
  • Step 9
    To store until serving time, place on cookie sheet with wax paper between layers.
  • Step 10
    Cover tightly and store in the refrigerator.
