My mother made a lot of corn bread it was the thin kind I make it that way too but I have added a little jack cheese.

Ingredients
- 1/2 cup yellow cornmeal
- 1/2 cup all purpose flour
- 1/4 cup sugar
- 1 1/2 tablespoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 large egg
- 2/3 cup whole milk
- 4 tablespoons butter
- 1/2 cup pepper jack cheese
- pinch shortening
How To Make thin corn bread

Step 1Pre-heat oven 425 degrees, rub a cast iron pan with a little shortening . Place butter in pan and put in oven to melt

Step 2WISK ALL DRY INGREDIENTS TO COMBINE EXCEPT PEPPER

Step 3ADD THE REST OF INGREDIENTS PLUS MELTED BUTTER FROM PAN STIR TILL COMBINED, POUR EVENLY INTO PAN. Sprinkle with pepper over top.
