tasty apple bread

This bread is a favorite in our family. It's very festive and is a wonderful breakfast bread or great for a snack. We have enjoyed this recipe many times, and I even sell loaves throughout the holidays. Eat plain or top with powdered sugar and cinnamon or even cream cheese icing and walnuts! Delish either way.

Ingredients

  • 1/4 cup golden raisins
  • 1/4 cup dried cranberries
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup maple syrup
  • 3 medium apples, peeled, cored and grated
  • 1/4 cup walnuts (optional)

How To Make tasty apple bread

  • Step 1
    Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan. Bring a small saucepan of water to a boil. Plump (rehydrate) raisins and cranberries by submerging them in the boiling water.

    Simmer on low for 15 minutes.
  • Step 3
    In a bowl, mix the butter and sugars until smooth and creamy.
  • Step 4
    Beat in the eggs one at a time.
  • Step 5
    In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
  • Step 6
    Mix into the butter mixture until moistened.
  • Step 7
    Stir in the apples, walnuts, syrup, cranberries, and raisins.
  • Step 8
    Transfer to the prepared loaf pan.
  • Step 9
    Bake for 1 hour in the preheated oven, until a toothpick inserted in the center comes out clean.
  • Step 10
    Cool in the pan for 15 minutes, then remove to a wire rack to cool completely.
