Ingredients

  • 2 c
    biscuit/baking mix
  • 2 Tbsp
    brown sugar
  • 1/2 tsp
    ground cinnamon
  • 1/4 tsp
    ginger
  • 1/4 tsp
    nutmeg
  • 1
    egg
  • 1 1/3 c
    milk
  • 1 c
    canned sweet potaotes, mashed
  • 2 Tbsp
    canola oil
  • 1 tsp
    vanilla extract

How to Make Sweet Potato Waffles w/ Nut Topping

Step-by-Step

  1. Combine all dry ingredients.
    In another bowl whisk the egg, milk, sweet potatoes, oil and vanilla. Stir into dry ingredients just until combined.
  2. Bake in preheated waffle iron until golden brown.
  3. For Nut Topping: in a small skillet melt 1 tbs. butter over medium heat add 1/2 cup chopped pecans, 1/2 cup chopped walnuts { i use all pecans} cook and stir for 2 minutes.
    Add 2 tbs brown sugar, 1 tbs water, 1/8 tsp ground cinnamon,dash of salt and dash of nutmeg.
    Cook and stir until sugar is dissolved.
    Serve waffles with topping and your favorite syrup.
