Ingredients
- 4 - eggs
- 2 cups sugar
- 1 cup vegtable oil
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 21/2 cups white flour (or 3 1/2 c flour w 1 1/2 tsp. baking soda)
- 3/4 teaspoon baking powder
- 2 cups grated squash
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 1/2 cup nuts
- 1 cup seedless raisins (plump raisins in a warm water soak

Step 1preheat oven 350 degrees grease 2 bread pans

Step 2Beat 4 eggs. Beat n 2 cups sugar. Add 1 cup vegetable oil and 1 tsp. vanilla. Combine 1 cup whole wheat flour and 2 1/2 cups white flour OR 3 1/2 cups four with 1 1/2 tsp baking soda, 3/4 tsp baking powder, 1 tsp nutmeg, 1 tsp. salt. Stir in 1/2 cup nuts and 1 cup seedless raisins. Add flour mixture to eggs, sugar, oil and vanilla and mix up with 2 cups grated squash. Pour into 2 greased pans.

Step 3Cook 50 to 60 minutes ~ check at 50 minutes. Let stand 10 minutes and turn out on rack. Freeze if desired !
