strawberry cream cheese bread

Makes 1 Loaf - Bake at 350
Ingredients
- FILLING:
- 1/4 cup sugar
- 1 - egg
- 1 8oz packages cream cheese or low fat cream cheese
- BREAD MIXTURE:
- 1/2 teaspoon baking powder
- 1 1/2 cups flour
- 1 cup sugar
- 2 - eggs - well beaten
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2/3 cup oil
- 1 cup fresh or frozen strawberries (thawed & drained)
- 1/2 cup chopped pecans
- GARNISH:
- 2 tablespoons chopped pecans
How To Make strawberry cream cheese bread

Step 1Grease and flour a bigger size loaf pan (9"X5").

Step 2Mix the 3 filling ingredients with a mixer and set aside.

Step 3Hand mix (IMPORTANT to Hand Mix) the ingredients for the bread till mixture is moist, be careful not to over mix. Put 1/2 of bread mixture into prepared pan & smooth to edges of pan. Next cover with the filling & smooth to edges of pan. Lastly top with the remaining bread mixture spreading it evenly and topping with the garnish & press the pecans into bread - so they bake into bread.

Step 4Bake till toothpick inserted into the middle comes out clean & mixture is solid when you lift the pan and shake it, I usually check first at 1 hr. Cool for at least 15 minutes on a cooling rack and then remove from pan. Cool completely before slicing with a serrated knife. Store any leftovers in the refrigerator.
