strawberry cream cheese bread

I live by 2 strawberry farms and when it is strawberry season this is requested by my family & friends.

Ingredients

  • FILLING:
  • 1/4 cup sugar
  • 1 - egg
  • 1 8oz packages cream cheese or low fat cream cheese
  • BREAD MIXTURE:
  • 1/2 teaspoon baking powder
  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 - eggs - well beaten
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup oil
  • 1 cup fresh or frozen strawberries (thawed & drained)
  • 1/2 cup chopped pecans
  • GARNISH:
  • 2 tablespoons chopped pecans

How To Make strawberry cream cheese bread

  • Step 1
    Grease and flour a bigger size loaf pan (9"X5").
  • Step 2
    Mix the 3 filling ingredients with a mixer and set aside.
  • Step 3
    Hand mix (IMPORTANT to Hand Mix) the ingredients for the bread till mixture is moist, be careful not to over mix. Put 1/2 of bread mixture into prepared pan & smooth to edges of pan. Next cover with the filling & smooth to edges of pan. Lastly top with the remaining bread mixture spreading it evenly and topping with the garnish & press the pecans into bread - so they bake into bread.
  • Step 4
    Bake till toothpick inserted into the middle comes out clean & mixture is solid when you lift the pan and shake it, I usually check first at 1 hr. Cool for at least 15 minutes on a cooling rack and then remove from pan. Cool completely before slicing with a serrated knife. Store any leftovers in the refrigerator.
