I love the holidays and all the cooking, baking and decorating that comes with November and December. I love making boxes and baskets filled with goodies for friends and family. This bread is just one of the recipes I use. It is easy and delicious. This bread is great warm, spread with butter or cream cheese and a big cup of coffee or hot chocolate.

Ingredients

  • 2 pounds pecans or walnuts, coursely chopped
  • 2 pounds dates, chopped
  • 2 cups sugar
  • 2 cups all purpose flour
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 8 - eggs, separated

How To Make special date nut loaf

  • Step 1
    Separate eggs; in a medium bowl beat egg whites until very stiff.
  • Step 2
    Put egg yolks in separate bowl and beat well. Add beaten egg yolks to stiff egg whites and mix well. Set aside.
  • Step 3
    In a large bowl sift flour, baking powder and salt; stir in sugar and blend well; add chopped date and nuts. Add eggs and mix well. Pour into prepared loaf pans.
  • Step 4
    Pre-heated oven to 325 degrees. Well grease 2 loaf pans. Bake 1 hour or until tooth pick in center comes out clean. Cool in pans about 15 minutes. Remove from pans and cool completely on wire racks.
