Southern Style Breakfast Puffs

How to Make Southern Style Breakfast Puffs
- Heat some (clean) oil 2-3 minutes in deef fryer or deep saucepan.
- Combine flour, 1/2 cup confectioners sugar, baking powder, salt and nutmeg in a small bowl. Set aside.
- Combine milk, water, oil (1/4 cup) and lemon peel in a saucepan. Heat till boiling.
- Add flour mixture aal at once. Beat in until mixture pulls away from the side of the pan and forms like a ball. Remove from heat and cool slightly.
- Add eggs, one at a time. Beat in between.
- Drop your dough by tablespoonfuls into the oil. Fry 3-4 puffs at a time for 4-6 minutes or till golden. Turn as needed.
- Drain them on paper towels. Then sprinkle with confectioners sugar. (You can put them one at a time in a paper or plastic bag with sugar and shake. ) (You can also mix 1/2 cup of confectioners sugar and 1/4 teaspoon of cinnamon and sift over warm puffs.)
- Makes 32 puffs.
