  • 2 c
    white corn meal
  • 2 1/2 c
    boiling water
  • 1 1/2 Tbsp
    butter, melted
  • 1 1/2 tsp
  • 2
    egg yolks, lightly beaten
  • 1 tsp
    baking soda
  • 1 1/2 c
  • 2
    egg whites, beaten stiff

How to Make Southern Spoonbread


  1. Add the cornmeal gradually to the boiling water and let stand a few minutes.
  2. Add the butter, salt and egg yolks.
  3. Dissolve the baking soda in the buttermilk and add to the cornmeal mixture.
  4. Fold in the egg whites.
  5. Turn into a buttered casserole.
  6. Bake at 375F for 40 minutes.
