Ingredients
- 1 cup active sourdough discard
- 2 1/2 cups all-purpose flour
- 1/2 cup milk
- 1/4 cup butter, softened
- 1 large egg
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1 tablespoon active dry yeast
- 1 egg, whipped with a little water for wash
- sesame seeds (optional)
How To Make sourdough discard hamburger buns

Step 1Warm the milk to 110 degrees. Add the sugar and yeast. Let sit for about 10 minutes until the mixture becomes frothy.

Step 2In a stand mixer fitted with a hook, mix the sourdough discard with the yeast mixture. Stir in the butter, salt, and egg.

Step 3Gradually add the flour and mix until the dough is soft and elastic. Continue to knead with the mixer or by hand for 10 minutes.

Step 4Place in a bowl oiled with a little olive oil. Cover with a towel or plastic wrap and let sit for 2 hours until the dough has doubled in size.

Step 5Punch down the dough and break it into 8 pieces. Shape into a round bun.

Step 6Place on a parchment-lined baking sheet. Let rest for 30 more minutes.

Step 7Brush with egg wash and sprinkle with sesame seeds.

Step 8Bake at 375 degrees for about 15 minutes. Cool and cut in half.
