Ingredients
- 65 grams sourdough starter
- 300 grams warm water
- 56 grams sugar
- 500 grams bread flour
- 20 grams olive oil
- 9 grams salt

Step 1whisk starter, water, sugar together

Step 2add oil , then bread flour and salt. mix

Step 3let rest 45 - 60 mins covered. do folds around the bowl or on the counter

Step 4cover and let rise overnight on the counter

Step 5divide and form into loaves. rest then tighten and place in loaf pans

Step 6cover and let rise till doubled - 1 to 2 hours. mine usually takes 1.5 hours.

Step 7preheat oven to 375 (I do 385). spray top with water or egg wash, sprinkle sesame seeds. bake about 40 mins (200 degrees). then tllt and cool on wire rack

Step 82 loaves 80g starter 450 g water 84 g sugar 750 g flour 30 g oil 13.5 g salt

Step 94 loaves 160 + starter 900 water 168 sugar 1500 flour 60 oil 27 salt

Step 10cinnamon raisin filling 1/4 cp brown sugar 1.5 t cinnamon 2 t flour 1 t cocoa raisins brush dough with 1 egg mixed with 1 T water, then sprinkle filling/raisins
