Ingredients

  • 3 - eggs
  • 1 cup buttermilk
  • 1 can flour
  • 1/4 teaspoon salt
  • 1 tablespoon butter, unsalted-melted

How To Make perfect popovers

  • Step 1
    Preheat oven to 425. Grease lightly 6 muffin cups with unsalted butter.Preheat pan for 2 minutes. Beat eggs lightly and add buttermilk and melted butter. Add flour and salt. Blend mixture until consistancy of heavy cream, approximately 1 minute.
  • Step 2
    Place one teaspoon of butter into each popover pan.Heat in oven one minute or until butter bubbles. Fill each cup 2/3 full and bake at 425 for 20 minutes. Reduce heat to 325 and bake until popovers are golden brown and as high as possible- approx. 15 to 20 minutes. Try to look through oven glass as frequent opening of the door will prevent rising.
  • Step 3
    Immediately remove from pans and serve hot. Makes 6 popovers. Break open and spread with butter or gravy. Fill with creamed seafood,chicken or beef.
