Old Fashioned Potato Bread (Bread Machine)
1 mediumrusset potato (8-9 oz.) cut into chunks
3 Tbspunsalted butter, cut into pieces
4 cbread flour
1 1/2 Tbspgranulated sugar
2 1/4 tspsaf yeast or 2 3/4 tsp bread machine yeast or 1 pkg of fast rising yeast
How to Make Old Fashioned Potato Bread (Bread Machine)
- Combine potato and water in a small saucepan. Simmer, covered, until the potato is tender, abut 10 minutes;slip off the peels. Mash or puree the potatoe with its water (do not drain; you want the water). Pour the potato-water mixture into a 2 cup glass measuring cup and add additional water to make 1 2/3 cups. Cool to room temperature.
- Place all the ingredients in order specified by the manufacturer of your machine; adding the potato mixture with the liquid ingredients. Set crust to medium and program for the Basic cycle. This recipe will not work with the Delay Timer function. Immediately remove bread from the bread pan and place it on a rack. Let cool to room temperature before slicing. Yeild 1 (2 lb) loaf.
