old fashioned potato bread (bread machine)

Prep. time on this includes the rising time! Machines will differ somewhat, but they are usually pretty close. This is an especially good potato bread. My family loves it. It's really good with stews, chili and other hot dishes,as well as everything else. Many of you are familiar with "Grandma Sycamore"'s bread. That is potato bread, if you aren't sure what the difference is in the taste and texture of the breads. It is truly yummy.

Ingredients

  • 1 medium russet potato (8-9 oz.) cut into chunks
  • 1 cup water
  • 3 tablespoons unsalted butter, cut into pieces
  • 4 cups bread flour
  • 1 1/2 tablespoons granulated sugar
  • 2 teaspoons gluten
  • 2 teaspoons salt
  • 2 1/4 teaspoons saf yeast or 2 3/4 tsp bread machine yeast or 1 pkg of fast rising yeast

How To Make old fashioned potato bread (bread machine)

  • Step 1
    Combine potato and water in a small saucepan. Simmer, covered, until the potato is tender, abut 10 minutes;slip off the peels. Mash or puree the potatoe with its water (do not drain; you want the water). Pour the potato-water mixture into a 2 cup glass measuring cup and add additional water to make 1 2/3 cups. Cool to room temperature.
  • Step 2
    Place all the ingredients in order specified by the manufacturer of your machine; adding the potato mixture with the liquid ingredients. Set crust to medium and program for the Basic cycle. This recipe will not work with the Delay Timer function. Immediately remove bread from the bread pan and place it on a rack. Let cool to room temperature before slicing. Yeild 1 (2 lb) loaf.
