Ingredients

medium ripe bananas chopped
1/2 c
all purpose flour
1/2 c
cornstarch
1/4 c
sweetened shredded coconut (you can use up to 1/2 cup)
2 Tbsp
sugar
1/2 tsp
baking powder
1/8 tsp
salt
2
egg yolks
1/4 c
milk (plus more if needed)
1/4 tsp
vanilla extract
confectioners' sugar, for serving

How to Make Nealy Dozier's Coconut Banana Fritters

Step-by-Step

  • 1Stir in a large bowl, bananas, flour, cornstarch, coconut, sugar, baking powder and salt, followed by egg yolks, milk and vanilla. Combine until thick, adding more milk as needed. (tablespoon by tablespoon)
  • 2Using spring-form ice cream scoop, form fritters and drop 4-5 at a time to hot 375 degree oil. Flip once until golden, 2-3 minutes. Remove with slotted spoon, drain on paper towels.
  • 3Let cool 5-10 minutes, sprinkle with confectioner's sugar. EAT!
  • 4NOTE: You can use a potato masher to combine your ingredients.
