Ingredients

  • 2 - medium ripe bananas chopped
  • 1/2 cup all purpose flour
  • 1/2 cup cornstarch
  • 1/4 cup sweetened shredded coconut (you can use up to 1/2 cup)
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 - egg yolks
  • 1/4 cup milk (plus more if needed)
  • 1/4 teaspoon vanilla extract
  • - confectioners' sugar, for serving

How To Make nealy dozier's coconut banana fritters

  • Step 1
    Stir in a large bowl, bananas, flour, cornstarch, coconut, sugar, baking powder and salt, followed by egg yolks, milk and vanilla. Combine until thick, adding more milk as needed. (tablespoon by tablespoon)
  • Step 2
    Using spring-form ice cream scoop, form fritters and drop 4-5 at a time to hot 375 degree oil. Flip once until golden, 2-3 minutes. Remove with slotted spoon, drain on paper towels.
  • Step 3
    Let cool 5-10 minutes, sprinkle with confectioner's sugar. EAT!
  • Step 4
    NOTE: You can use a potato masher to combine your ingredients.
