Ingredients
- 2 - medium ripe bananas chopped
- 1/2 cup all purpose flour
- 1/2 cup cornstarch
- 1/4 cup sweetened shredded coconut (you can use up to 1/2 cup)
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 - egg yolks
- 1/4 cup milk (plus more if needed)
- 1/4 teaspoon vanilla extract
- - confectioners' sugar, for serving

Step 1Stir in a large bowl, bananas, flour, cornstarch, coconut, sugar, baking powder and salt, followed by egg yolks, milk and vanilla. Combine until thick, adding more milk as needed. (tablespoon by tablespoon)

Step 2Using spring-form ice cream scoop, form fritters and drop 4-5 at a time to hot 375 degree oil. Flip once until golden, 2-3 minutes. Remove with slotted spoon, drain on paper towels.

Step 3Let cool 5-10 minutes, sprinkle with confectioner's sugar. EAT!

Step 4NOTE: You can use a potato masher to combine your ingredients.
