My husband, who is from the Northwest, never liked or ate cornbread.....so this Texas gal had to convert him!

Ingredients

1 c
all purpose flour
1 c
yellow cornmeal
4 tsp
baking powder
1 tsp
salt
2 Tbsp
sugar
1
egg
3 Tbsp
cooking oil
1/2 c
finely chopped onion
2/3 c
cheddar cheese, grated
1/2 can(s)
chopped green chilies
1 c
milk

How to Make My Husband Favorite Cornbread!

Step-by-Step

  • 1Preheat oven to 450 degrees. Grease a cast iron pan (note: I have a Johnny Bread pan which has 8 sections, and you have crust on all surfaces!)
  • 2Combine flour, cornmeal, sugar, salt and baking powder. Stir in your grated cheese, onions and chilies; then add your eggs, milk and oil. Mix until all ingredients are combined well.
  • 3Pour into prepared pan, bake for approx. 25 minutes or until brown on top. Let cool in pan about 5 minutes, then remove and have that butter ready!
