My mother-in-law made this for Thanksgiving. It is fabulous.

  • ·
    non stick cooking spray
  • 8 oz
    thick sliced bacon, chopped
  • 2 1/2 c
    low sodium chicken broth
  • 1/2 c
    apricot fruit spread
  • 1/2 c
    diced carrots
  • 1/2 c
    diced yellow onion
  • 1/2 c
    diced celery
  • 1/2 c
    dried cranberries
  • 4 Tbsp
  • 4 c
    herb seasoned stuffing
  • 1/2 c
    walnut pieces

How to Make Mother's Stuffing


  1. Preheat oven to 350 degrees.
  2. Coat a 9 x 13 inch baking dish with non-stick cooking spray.
  3. In a skillet, cook bacon over medium high heat until browned. Drain on paper towels.
  4. Place broth, apricot spread, carrots,celery, onion, cranberries and butter in a saucepan.
  5. Bring to a boil then remove from heat.
  6. Place dry stuffing, walnuts and bacon in a large mixing bowl.
  7. Add broth mixture. Toss to mix well.
  8. Place in the prepared baking dish
  9. Bake uncovered for 30 minutes.
