My mother-in-law made this for Thanksgiving. It is fabulous.

Ingredients
- - non stick cooking spray
- 8 ounces thick sliced bacon, chopped
- 2 1/2 cups low sodium chicken broth
- 1/2 cup apricot fruit spread
- 1/2 cup diced carrots
- 1/2 cup diced yellow onion
- 1/2 cup diced celery
- 1/2 cup dried cranberries
- 4 tablespoons butter
- 4 cups herb seasoned stuffing
- 1/2 cup walnut pieces
How To Make mother's stuffing

Step 1Preheat oven to 350 degrees.

Step 2Coat a 9 x 13 inch baking dish with non-stick cooking spray.

Step 3In a skillet, cook bacon over medium high heat until browned. Drain on paper towels.

Step 4Place broth, apricot spread, carrots,celery, onion, cranberries and butter in a saucepan.

Step 5Bring to a boil then remove from heat.

Step 6Place dry stuffing, walnuts and bacon in a large mixing bowl.

Step 7Add broth mixture. Toss to mix well.

Step 8Place in the prepared baking dish

Step 9Bake uncovered for 30 minutes.
