My mother-in-law made this for Thanksgiving. It is fabulous.

Ingredients

non stick cooking spray
8 oz
thick sliced bacon, chopped
2 1/2 c
low sodium chicken broth
1/2 c
apricot fruit spread
1/2 c
diced carrots
1/2 c
diced yellow onion
1/2 c
diced celery
1/2 c
dried cranberries
4 Tbsp
butter
4 c
herb seasoned stuffing
1/2 c
walnut pieces

How to Make Mother's Stuffing

Step-by-Step

  • 1Preheat oven to 350 degrees.
  • 2Coat a 9 x 13 inch baking dish with non-stick cooking spray.
  • 3In a skillet, cook bacon over medium high heat until browned. Drain on paper towels.
  • 4Place broth, apricot spread, carrots,celery, onion, cranberries and butter in a saucepan.
  • 5Bring to a boil then remove from heat.
  • 6Place dry stuffing, walnuts and bacon in a large mixing bowl.
  • 7Add broth mixture. Toss to mix well.
  • 8Place in the prepared baking dish
  • 9Bake uncovered for 30 minutes.
