mom's hot water cornbread

I don't really have a story but my mom loved to make these to eat with Fried chicken and cabbage. I think they go great with just about anything.

Ingredients
- 1 cup self-rising buttermilk corn meal
- 1 cup all purpose flour
- 1 tablespoon sugar
- 2 large eggs
- 3/4 cup milk
- 2/3 cup vegetable oil divided
How To Make mom's hot water cornbread

Step 1Combine the cornmeal,flour and sugar in a large bowl

Step 2In a medium bowl, beat eggs. Beat in milk and 1/3c of the vegetable oil.

Step 3Create a well in the dry ingredients and mix in the liquid mixture stirring until combined but not too smooth.

Step 4Heat 2tbs of oil in a large skillet(cast iron if you have one)over medium-high heat.Scoop out large spoonfuls of your batter and place in the skillet. Flatten the batter into 3-inch circles like making a pancake. Fry each side 1-2 minutes each side. Keep adding oil as needed to fry the remaining batter. Drain and enjoy!
