My favorite cornbread recipe.

  • 1 c
    all-purpose flour
  • 1 c
    yellow cornmeal
  • 4 tsp
    baking powder
  • 1/2 tsp
    kosher salt
  • 1 c
    butter, softened or melted
  • 1 c
  • 15 oz
    cream style corn
  • 4 1/2 oz
    can diced green chilies, drained
  • 1/2 c
    shredded monterey jack cheese
  • 1/2 c
    shredded cheddar cheese
  • 4

How to Make Mexican Cornbread


  1. Combine flour, cornmeal, baking powder, and salt in a bowl. Set aside.
  2. In a separate bowl, beat butter and sugar together. Beat in eggs one at a time. Stir in corn, cheese, and chilies until well blender.
  3. Stir in dry ingredients into the wet ingredients a little at a time until well blended. Pour batter into a greased 13x9 inch pan. Place in a preheated 300 degree oven for 1 hour.
