Mexican Cornbread

1 call-purpose flour

1 cyellow cornmeal

4 tspbaking powder

1/2 tspkosher salt

1 cbutter, softened or melted

1 csugar

15 ozcream style corn

4 1/2 ozcan diced green chilies, drained

1/2 cshredded monterey jack cheese

1/2 cshredded cheddar cheese

4eggs
How to Make Mexican Cornbread
- Combine flour, cornmeal, baking powder, and salt in a bowl. Set aside.
- In a separate bowl, beat butter and sugar together. Beat in eggs one at a time. Stir in corn, cheese, and chilies until well blender.
- Stir in dry ingredients into the wet ingredients a little at a time until well blended. Pour batter into a greased 13x9 inch pan. Place in a preheated 300 degree oven for 1 hour.
