My favorite cornbread recipe.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 4 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup butter, softened or melted
  • 1 cup sugar
  • 15 ounces cream style corn
  • 4 1/2 ounces can diced green chilies, drained
  • 1/2 cup shredded monterey jack cheese
  • 1/2 cup shredded cheddar cheese
  • 4 - eggs

How To Make mexican cornbread

  • Step 1
    Combine flour, cornmeal, baking powder, and salt in a bowl. Set aside.
  • Step 2
    In a separate bowl, beat butter and sugar together. Beat in eggs one at a time. Stir in corn, cheese, and chilies until well blender.
  • Step 3
    Stir in dry ingredients into the wet ingredients a little at a time until well blended. Pour batter into a greased 13x9 inch pan. Place in a preheated 300 degree oven for 1 hour.
