all-purpose flour
1 c
yellow cornmeal
4 tsp
baking powder
1/2 tsp
kosher salt
1 c
butter, softened or melted
1 c
sugar
15 oz
cream style corn
4 1/2 oz
can diced green chilies, drained
1/2 c
shredded monterey jack cheese
1/2 c
shredded cheddar cheese
4
eggs

How to Make Mexican Cornbread

Step-by-Step

  • 1Combine flour, cornmeal, baking powder, and salt in a bowl. Set aside.
  • 2In a separate bowl, beat butter and sugar together. Beat in eggs one at a time. Stir in corn, cheese, and chilies until well blender.
  • 3Stir in dry ingredients into the wet ingredients a little at a time until well blended. Pour batter into a greased 13x9 inch pan. Place in a preheated 300 degree oven for 1 hour.
