This was my mothers recipe. I have tried many different ones ,but this one is the best. This is from the 70's. It goes great with a pot if pinto beans.

Ingredients

  • 1 cup cornmeal
  • 1 cup milk
  • 1 cup chopped onion
  • 1 can corn,drained
  • 1 clove garlic
  • 2 - eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup butter,melted
  • 1 cup cheddar cheese, shredded
  • 3 - jalapeno peppers,chopped

How To Make mexican cornbread

  • Step 1
    Mix all together except the cheese and pepper. Pour half of the batter in a square baking dish that has been sprayed with a nonstick spray, add the cheese and peppers and pour the rest of the batter over the cheese and peppers. Bake at 350 for 20-25 minutes or until brown on top.
