This was my mothers recipe. I have tried many different ones ,but this one is the best. This is from the 70's. It goes great with a pot if pinto beans.

Ingredients

  • 1 c
    cornmeal
  • 1 c
    milk
  • 1 c
    chopped onion
  • 1 can(s)
    corn,drained
  • 1 clove
    garlic
  • 2
    eggs
  • 1/4 tsp
    salt
  • 1/2 tsp
    baking powder
  • 1/4 c
    butter,melted
  • 1 c
    cheddar cheese, shredded
  • 3
    jalapeno peppers,chopped

How to Make Mexican Cornbread

Step-by-Step

  1. Mix all together except the cheese and pepper. Pour half of the batter in a square baking dish that has been sprayed with a nonstick spray, add the cheese and peppers and pour the rest of the batter over the cheese and peppers. Bake at 350 for 20-25 minutes or until brown on top.
