mama-n-em's hot water cornbread
This is a handed down recipe and a Southern must have especially with turnip greens and pork chops! This is a picture of my great- grandmother; Laura Autrey Huffman (bottom right).
Ingredients
- 2-3 cups white corn meal (martha white is what i use)
- 2 teaspoons salt
- 2 tablespoons vegtable oil
- 3-4 cups boiling water
- - cooking oil for frying
How To Make mama-n-em's hot water cornbread

Step 1Mix together white cornmeal with salt and oil.

Step 2Boil water to a rolling boil. Stir the boiling water and the dry ingredients together slowly. Use just enough water for ingredients to stick together without being stiff.

Step 3Heat cooking oil in deep fryer to 350-400 dregrees. Have a container of cold water nearby to wet hands while handling the mixture because it is HOT!

Step 4Make patties the size of your palm and drop in heated oil. Cool hands as needed. Turn once when they are golden brown. Drain on paper towel.
