THIS TIME OF YEAR AFTER SO MANY GRAY DAYS, BAKING THESE BEAUTIFUL LEMON BLUEBERRY SCONES ARE JUST A GREAT WAY TO SAY "HELLO SPRING, WELCOME"

Ingredients

  • 2 c
    flour
  • 1/2 c
    butter, chilled
  • 1/4 c
    sugar
  • 1/2 c
    milk
  • 2 1/2 tsp
    baking powder
  • 1
    egg
  • 1/4 tsp
    salt
  • 1 1/2 tsp
    lemon zest, grated
  • 1/8 tsp
    nutmeg
  • 1 c
    blueberries, fresh
  • 1/2 c
    powdered sugar
  • 1 Tbsp
    lemon juice

How to Make LEMON BLUEBERRY SCONES

Step-by-Step

  1. PREHEAT OVEN TO 425.
  2. PLACE PARCHMENT PAPER ON A BAKING SHEET
  3. COMBINE FLOUR, SUGAR, BAKING POWDER, SALT & NUTMEG.
  4. CUT IN BUTTER WITH PASTRY BLENDER UNTIL MIXTURE RESEMBLES COARSE CRUMBS.
  5. IN A MEDIUM SIZE BOWL COMBINE MILK, EGG & LEMON ZEST.
  6. ADD MILK MIXTURE TO DRY INGREDIENTS, MIXING WITH FORK UNTIL DRY INGREDIENTS ARE MOIST AND A SOFT DOUGH FORMS. GENTLY STIR IN BLUEBERRIES.
  7. GATHER DOUGH INTO A BALL & GENTLY KNEAD ON LIGHTLY FLOURED SURFACE 8 TO 10 TIMES. PLACE DOUGH ON LIGHTLY BUTTERED BAKING SHEET.
  8. ON PARCHMENT PAPER PAT INTO 9” CIRCLE, WITH SHARP KNIFE, CUT THROUGH DOUGH TO FORM 8 WEDGES. DO NOT SEPARATE.
  9. BAKE UNTIL LIGHTLY GOLDEN, 20 TO 22 MINUTES. SEPARATE WEDGES. LET COOL FOR 5 MINUTES & DRIZZLE WITH GLAZE.
  10. TO MAKE GLAZE: COMBINE POWDERED SUGAR AND LEMON JUICE UNTIL SMOOTH
