leanne's hot water corn or grit bread
I had never had hot water cornbread before I met a friend from Arkansas,she would talk about it ,she brought me some and it was delicious.I watched several Tube videos to see how it was done.I spoke to some people and what I realized was, everyone makes it different! so,I decided to make my own version too.It came out great so this is how I do it.It's based on the cornbread I learned to make as a child. You can use cornmeal or grits(uncooked) both are delicious!

Ingredients
- - 1 c all purpose flour
- - 1 c cornmeal or dry grits
- - 1/4 c sugar
- - 1 t. salt
- - 1 t. baking powder
- - boiling water
How To Make leanne's hot water corn or grit bread

Step 1Heat a skillet, add just enough oil to cover bottom of skillet.(I like to use a cast iron skillet) Combine dry ingredients.mix well.Slowly add boiling water,until you have a thick consistency.Using a 1/4 c or so(depending the size you want) pat out dough into 1/4 -1/2 inch thick oval shaped pancake.Cook in hot oil until golden brown on both side and done all the way through.
