johnny cakes
This is a recipe I created with my grandma in mind. I love to serve them with roast or smothered pork chops ( because GRAVY!) and baby green Lima beans.

Ingredients
- 2 cups self-rising cornmeal
- 2 tablespoons sugar
- 2 teaspoons onion powder
- 2-3 tablespoons green onions, chopped
- 2 cups boiling water
- 1 cup cooking oil
How To Make johnny cakes

Step 1Heat oil in iron skillet or any heavy bottomed skillet to Med-high (hot but not smoking).

Step 2Mix first 4 ingredients together.

Step 3Add 2 cups boiling water and quickly stir together. Pat by lg. spoonfuls in fingers and place in hot oil. Fry 3-4 at a time for 3 minutes in each side.

Step 4Drain on paper towels. Serve hot with butter.

Step 5*NOTE* If you can’t find self-rising cornmeal, use 1 1/2 c. White or yellow cornmeal with 1/2 c. self-rising flour.
