How to Make Johnny Cakes
- Heat oil in iron skillet or any heavy bottomed skillet to Med-high (hot but not smoking).
- Mix first 4 ingredients together.
- Add 2 cups boiling water and quickly stir together. Pat by lg. spoonfuls in fingers and place in hot oil. Fry 3-4 at a time for 3 minutes in each side.
- Drain on paper towels. Serve hot with butter.
If you can’t find self-rising cornmeal, use 1 1/2 c. White or yellow cornmeal with 1/2 c. self-rising flour.
