This is my husbands favorite corn bread - when ever they have a cookout at work he always has me whip up a batch.

Ingredients
- 1/2 cup fine corn meal
- 1/2 cup corn flour (goya brand masarepa)
- 1 cup all purpose flour
- 2/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup oil
- 3 tablespoons butter, melted
- 2 large eggs, beaten
- 1 1/4 cups milk
- 3 large jalapeno peppers, sliced
- 1/2 cup corn, cooked and cooled
- 1 1/2 cups cheddar cheese, shredded- reserve 3/4 cup
How To Make jalapeno cheese corn bread

Step 1Add dry ingredients to a bowl and make a well in the center.

Step 2Gently whisk in the wet ingredients and stir just until mixed. Batter will be runny.

Step 3Stir in jalapenos, corn and half th cheddar cheese.

Step 4Bake in a sprayed 8 x 8 pan at 350 degrees for 35 minutes.

Step 5Top with te reserved cheese and broil until melted and bubbly.

Step 6Note - Doubles perfectly for a 9 x 13 pan.
