jalapeno cheese corn bread

This is my husbands favorite corn bread - when ever they have a cookout at work he always has me whip up a batch.

Ingredients

  • 1/2 cup fine corn meal
  • 1/2 cup corn flour (goya brand masarepa)
  • 1 cup all purpose flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup oil
  • 3 tablespoons butter, melted
  • 2 large eggs, beaten
  • 1 1/4 cups milk
  • 3 large jalapeno peppers, sliced
  • 1/2 cup corn, cooked and cooled
  • 1 1/2 cups cheddar cheese, shredded- reserve 3/4 cup

How To Make jalapeno cheese corn bread

  • Step 1
    Add dry ingredients to a bowl and make a well in the center.
  • Step 2
    Gently whisk in the wet ingredients and stir just until mixed. Batter will be runny.
  • Step 3
    Stir in jalapenos, corn and half th cheddar cheese.
  • Step 4
    Bake in a sprayed 8 x 8 pan at 350 degrees for 35 minutes.
  • Step 5
    Top with te reserved cheese and broil until melted and bubbly.
  • Step 6
    Note - Doubles perfectly for a 9 x 13 pan.
