This is my husbands favorite corn bread - when ever they have a cookout at work he always has me whip up a batch.

  • 1/2 c
    fine corn meal
  • 1/2 c
    corn flour (goya brand masarepa)
  • 1 c
    all purpose flour
  • 2/3 c
  • 1 Tbsp
    baking powder
  • 1/2 tsp
  • 1/3 c
  • 3 Tbsp
    butter, melted
  • 2 large
    eggs, beaten
  • 1 1/4 c
  • 3 large
    jalapeno peppers, sliced
  • 1/2 c
    corn, cooked and cooled
  • 1 1/2 c
    cheddar cheese, shredded- reserve 3/4 cup

How to Make Jalapeno Cheese Corn Bread


  1. Add dry ingredients to a bowl and make a well in the center.
  2. Gently whisk in the wet ingredients and stir just until mixed. Batter will be runny.
  3. Stir in jalapenos, corn and half th cheddar cheese.
  4. Bake in a sprayed 8 x 8 pan at 350 degrees for 35 minutes.
  5. Top with te reserved cheese and broil until melted and bubbly.
  6. Note - Doubles perfectly for a 9 x 13 pan.
