This is my husbands favorite corn bread - when ever they have a cookout at work he always has me whip up a batch.

1/2 c
fine corn meal
1/2 c
corn flour (goya brand masarepa)
1 c
all purpose flour
2/3 c
1 Tbsp
baking powder
1/2 tsp
1/3 c
3 Tbsp
butter, melted
2 large
eggs, beaten
1 1/4 c
3 large
jalapeno peppers, sliced
1/2 c
corn, cooked and cooled
1 1/2 c
cheddar cheese, shredded- reserve 3/4 cup

How to Make Jalapeno Cheese Corn Bread


  • 1Add dry ingredients to a bowl and make a well in the center.
  • 2Gently whisk in the wet ingredients and stir just until mixed. Batter will be runny.
  • 3Stir in jalapenos, corn and half th cheddar cheese.
  • 4Bake in a sprayed 8 x 8 pan at 350 degrees for 35 minutes.
  • 5Top with te reserved cheese and broil until melted and bubbly.
  • 6Note - Doubles perfectly for a 9 x 13 pan.
