italian foccacia
I learned how to make this when I was a front line cook at the Country Club. We used to serve up for luncheons and banquets! I have been making it since and put my own twist into this bread. Never followed a recipe! I look to see what is in it and add my own. Especially if you don't have all the exact ingredients. I always improvise. ~Enjoy!

Ingredients
- MAKING THE DOUGH
- 1 package yeast or 1 tbsp. from the jar
- 2 tablespoons sugar
- 1/2 cup water
- 1 1/2 cups all purpose flour or bread flour
- 1 1/2 cups 100% whole wheat flour
- 1 teaspoon salt
- 1/2 cup parmesan cheese
- 2 tablespoons italian seasoning
- HEAT TO MELT
- 1 cup water
- 2 tablespoons butter,marg, or oil
- DIPPING SAUCE
- 1/2 cup olive oil, extra virgin
- 1/2 cup balsamic vinegar
- 1 tablespoon italian seasoning
How To Make italian foccacia

Step 1Heat the water and oil in a 1 cup glass in microwave for a minute. Let cool off to lukewarm we don't want to kill the yeast.

Step 21/2 cup warm water add the yeast and 2 tbsp of sugar and cover till raised.

Step 3In a good sized bowl add all your flours, salt, Parmesan and Italian seasoning.(Hold back one cup of flour) Add the luke warm water and oil mixture to the dry ingredients. Mix in and then add in your yeast, water and sugar mixture. Stir well.

Step 4Dough is likely to be still sticky at this point. Now the fun part! Slowly add the last 1 cup flour and start Kneading the dough add more flour till the dough is no longer sticky.. you may need a few more hand pinches after this. Knead well forming a ball.

Step 5Drizzle with oil and cover and let rise for 1 hour or double in size. I turn on my oven at lowest temp warm it up turn it off and leave the bread dough in the warm oven.

Step 6Knead the dough again really well then turn it into a greased/oiled round cake pan or baking dish.(flatten it out so it is close to the edges of the pan) Cover and let rise for an additional 30 minutes. Preheat oven to 375 and cook for 25-30 mins or until nice and brown. Toothpick comes out clean. Turn out on cooling rack and rub butter/margarine over the top and sides this prevents the outside from hardening.

Step 7Cut into wedges and serve with soups, pasta, fettuccine.Enjoy it with the dipping sauce in a small condiment bowl. SAUCE: Add all ingredients into a jar and shake well to mix. Shake before pouring.
