Gotta have the perfect hushpuppy, and I could eat these as a meal. This is how my mom used to make them

Ingredients

  • 2 cups self-rising buttermilk corn meal
  • 1/4 cup self rising flour
  • 1 cup buttermilk
  • 1 small onion, diced small or 6 green onions chopped small
  • 1 teaspoon garlic powder
  • 1 - egg
  • - canola or vegetable oil for frying

How To Make hushpuppies(kat's)

  • Step 1
    In a medium bowl add cornmeal, flour, onion, and garlic powder, mix egg and buttermilk together and stir into dry ingredients. (May need to add a little more buttermilk or water if to thick , you want it about a medium thickness)
  • Step 2
    Heat enough oil in deep fryer or medium size pot. I just set my heat between medium and high. let the oil get hot and drop batter by the tablespoon full into oil, I use a medium pot and do about 4 at a time, let brown on one side then use slotted metal spoon to flip, about 1 minutes per side, remove from oil and drain on rack or paper towels
