Absolutely incredible! I know you are probably thinking who would put zucchini in bread, but surprisingly it makes an extremely tasty snack. Must try food and made from scratch! Can't get any better than that.

Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • 3 - eggs
  • 1 cup vegetable oil
  • 2 1/4 cups sugar
  • 3 teaspoons vanilla extract
  • 2 cups shredded zucchini

How To Make homemade zucchini bread

  • Step 1
    Grease and flour 2 8x4" loaf pans. (You can also use Pam)
  • Step 2
    Sift all the dry ingredients together in another large bowl.
  • Step 3
    Mix the sugar, eggs, oil, and vanilla.
  • Step 4
    Add the dry ingredients to the wet ingredients. Mix well.
  • Step 5
    Add the zucchini
  • Step 6
    Bake 40-60 minutes, cool 20 minutes, remove pans, store in refrigerator.
