Ingredients

  • 1 cup warm water
  • 3 tablespoons warm milk
  • 2 teaspoons dry active yeast
  • 2 1/2 tablespoons granulated sugar
  • 3 cups bread flour
  • 1/2 cup all-purpose flour
  • 2 1/2 tablespoons butter
  • 2 teaspoons salt
  • 2 large eggs, plus an extra one for brushing

How To Make homemade brioche hamburger buns

  • Step 1
    Place the warm water and milk in a bowl. Make sure it's around 110 degrees. Add the yeast and sugar and let sit 10 minutes until it's nice and foamy.
  • Step 2
    Place both flours in a stand mixer with a hook attachment. Add the butter and salt and mix until you don't see the butter anymore.
  • Step 3
    Add the eggs one at a time. Add more flour if the dough is too sticky. Knead it with the stand mixer on low speed for 10 minutes.
  • Step 4
    Place in an oiled bowl and cover with plastic wrap. Let rise in a warm place for 1 hour until doubled.
  • Step 5
    Punch the dough down and roll it into 6 balls. Set them in ring molds on a parchment-lined baking sheet. Let raise again for an hour or until doubled.
  • Step 6
    Brush with an egg and water mixture.
  • Step 7
    Bake at 400 degrees for about 10 minutes.
  • Step 8
    Remove from the ring molds and cut in half.
