  • 2 1/2 c
    yellow cornmeal
  • 1 c
    all-purpose flour
  • 1 Tbsp
    plus 1 teaspoon baking powder
  • 1 tsp
  • 2 Tbsp
  • 1 1/2 c
  • 1/2 c
    vegetable oil
  • 3
  • 2 c
    sharp cheddar cheese, shredded
  • 1/2 large
    onion, grated
  • 17 oz
    can cream-style corn
  • 6-8
    green chiles, chopped

How to Make Gourmet Cornbread


  1. Combine cornmeal, flour baking powder, salt, and sugar in a large bowl; stir well.
  2. Combine milk, oil, and eggs in a medium mixing bowl; beat well at medium speed of an electric mixer. Add the milk mixture, cheese and remaining ingredients to cornmeal mixture, stirring just until dry ingredients are moistened.
  3. Pour batter into a greased 13x9x2 inch baking pan. Bake at 425 degrees for 25 to 30 minutes or until golden brown.
