gluten free(or not!) hushpuppies
My daughter and I eat (mostly) wheat free. We do not have celiac disease, but both feel better when we avoid wheat. Usually this means making separate food (pasta, bread, whatever) for us. In the case of these hushpuppies, though, I can make one batch for the whole family! They are so good and no one is ever the wiser that they are eating a gluten free food! Super easy, too! If you don't need to make them wheat free just use a comparably sized regular corn bread mix and the same recipe!

Ingredients
- 1 package bob's red mill gluten free corn bread mix
- 2 - eggs
- 3/4-1 cup milk
- 1 - small onion, finely minced or grated*
- 1/4 teaspoon cajun seasoning, optional
- - oil for frying
How To Make gluten free(or not!) hushpuppies

Step 1Heat about 1 1/2 in. of oil in heavy skillet.

Step 2Combine the mix, eggs, 3/4c of the milk, onion and seasoning. If batter is too dry, add enough remaining milk to completely moisten(batter should be fairly thick, though). Let batter sit for 3-4 min. until it has thickened a bit.

Step 3Drop tablespoon sized(or a bit smaller to yield more) bits of the dough into hot oil. Fry 1-2 min.or until first side is golden. Flip them with a fork, or slotted spoon and fry 1-2 min. more until other side is golden brown. Remove from oil with slotted spoon and drain on paper towels.

Step 4note: You can use 1/2-1tsp. onion powder in place of the grated onion and they still taste good!
