- 1/2 cup flour-sifted
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 1/2 teaspoon baking powder
- 1 cup coconut-flaked
- 1/3 cup evaporated milk
- 1 teaspoon butter
- 2 - eggs-separated
How To Make fritters-sauce

Step 1mix together all dry ingreds., add coconut, milk and butter. beat egg yols a little bit, add to coconut mixture, fold in stiffly beaten egg whites.

Step 2drop by tbsp into hot oil preheated to 350, fry til golden brown; serve with Caramel Sauce:

Step 3Caramel Sauce: 1c. suagr, 1. hot water, 1/8 tsp. salt, 1 1/2c. light cream or evaporated milk, 1/2 tsp. vanilla; place sugar in pan and cook on med. heat til caramelized stir often; add the hot water-stir in salt-cream-vanilla. Makes 2 1/4 c.
