Ingredients For fritters-sauce

1/2 cflour-sifted

1/2 tspsalt

2 tspsugar

1/2 tspbaking powder

1 ccoconut-flaked
-
1/3 cevaporated milk

1 tspbutter

2eggs-separated
How To Make fritters-sauce

1mix together all dry ingreds., add coconut, milk and butter. beat egg yols a little bit, add to coconut mixture, fold in stiffly beaten egg whites.

2drop by tbsp into hot oil preheated to 350, fry til golden brown; serve with Caramel Sauce:

3Caramel Sauce: 1c. suagr, 1. hot water, 1/8 tsp. salt, 1 1/2c. light cream or evaporated milk, 1/2 tsp. vanilla; place sugar in pan and cook on med. heat til caramelized stir often; add the hot water-stir in salt-cream-vanilla. Makes 2 1/4 c.
