This is my mother's recipe and i love them. They are larger than store bought and are a great addition to any breakfast.

Ingredients
- 1 cup milk
- 3 tablespoons butter
- 1 - egg
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 3 cups all purpose flour
- 1 1/2 teaspoons active dry yeast
- - cornmeal
How To Make english muffins in the bread machine

Step 1Put ingredients in the machine in the order listed according to the manufacturer, except the cornmeal.

Step 2Start up the dough cycle.

Step 3When the cycle is finished, sprinkle corn meal over your work area.

Step 4Divide dough into eight equal piece and pat each piece into a 1/2" thick round.

Step 5Then, turn each round in dish of cornmeal.

Step 6Place the rounds on a baking sheet, cover and let rise for 20-30 minutes -- until not quite double

Step 7Heat a dry cast iron skillet or griddle over a low flame.

Step 8Spray skillet with oil, then cook muffins about 5 - 7 minutes on each side. They should be golden brown when you turn them.

Step 9Split the muffins with a fork or serrated knife and serve warm. (They also freeze well and can be toasted or reheated in the microwave.)
