ellen's yorkshire pudding popovers
I think I gleaned this from a newspaper long, long ago. I never make gravy with this. I just use the juices from the roasting pan to spoon over the popovers--yum!

Ingredients
- 1 cup all purpose flour
- 1 cup milk
- 3 - eggs
- 1 teaspoon salt
- 4 tablespoons meat drippings from roast
How To Make ellen's yorkshire pudding popovers

Step 1Combine first four ingredients in medium size bowl; beat together with mixer until smooth--about one minute.

Step 2Stir up drippings in roasting pan to mix fat and meat juices. Measure one teaspoon pan drippings into each cup of a 12-cup muffin pan. Place muffin pan into oven (400 degrees) for 3 minutes to heat.

Step 3Pour popover batter into muffin cups, filling each half to 3/4 full. Bake at 400 degrees for 35-40 minutes, until popovers are puffed and golden brown.

Step 4Serve with gravy, broth, or butter, alongside roast beef and vegetables.
