Eggnog (mini loaves) Bread

I love this bread. It does have a distinct eggnog flavor, so if you don't like eggnog, you won't like it! I just stumbled upon this recipe recently, but it will become a part of my yearly Christmas baking.

Always play around with the baking time depending on the size of loaf pan you use. The pans I use makes six mini loaves, instead of three and only has to bake 23-25 minutes

Ingredients

  • 2 1/4 c
    all purpose flour
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 2
    eggs
  • 1 c
    eggnog
  • 3/4 c
    sugar
  • 1/2 c
    butter, melted
  • 2 tsp
    vanilla extract
  • 2 tsp
    rum extract

How to Make Eggnog (mini loaves) Bread

Step-by-Step

  1. In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.
  2. In another bowl, beat the eggs, eggnog, sugar, melted butter, vanilla extract and rum extract. Stir into dry ingredients just until moistened.
  3. Pour into three greased 5 3/4-in. X 3-in. X 2-in. loaf pans. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  4. Cool for 10 minutes before removing from pans to wire racks.

    Yield: 3 loaves.
