eggnog (mini loaves) bread

I love this bread. It does have a distinct eggnog flavor, so if you don't like eggnog, you won't like it! I just stumbled upon this recipe recently, but it will become a part of my yearly Christmas baking. Always play around with the baking time depending on the size of loaf pan you use. The pans I use makes six mini loaves, instead of three and only has to bake 23-25 minutes

Ingredients

  • 2 1/4 cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 - eggs
  • 1 cup eggnog
  • 3/4 cup sugar
  • 1/2 cup butter, melted
  • 2 teaspoons vanilla extract
  • 2 teaspoons rum extract

How To Make eggnog (mini loaves) bread

  • Step 1
    In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.
  • Step 2
    In another bowl, beat the eggs, eggnog, sugar, melted butter, vanilla extract and rum extract. Stir into dry ingredients just until moistened.
  • Step 3
    Pour into three greased 5 3/4-in. X 3-in. X 2-in. loaf pans. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Step 4
    Cool for 10 minutes before removing from pans to wire racks. Yield: 3 loaves.
