delia's bread

Aunt Delia made bread every day, and Grandma W and I spend one entire summer going to her house to measure when she mixed, then home to Grandma's to try and duplicate. Aunt Delia NEVER measured, so a pinch to her could have been literally a pinch, or a palm full. This is the recipe we came up with! It is wonderful, and even great day 2 for toast with breakfast.

Mix together flour, sugar and salt. Dissolve yeast in water and add a few pinches of sugar to help it dissolve. Mix into the flour mixture. Squirt in a little oil or a little butter. Knead out the lumps, then let raise in an oiled bowl, covered with a towel, in a warm place, until doubled. Beat down, and let double again. Cook in a 375 degree oven 45 min to an hour until browned.
