Dessert Crepes are amazing, I never had a recipe for Entree ones, nor the sauce...so I was thrilled to see these in Ma's recipe box we found in NC in July 2019.

Step 1ENTREE CREPES: 1 c cold water 1 c cold milk 4 large eggs 1/2 t salt 2 c flour, sifted 4 T melted butter

Step 2DESSERT CREPES: 3/4 c milk 3/4 c cold water 3 egg yolks 1 T sugar 3 T orange liqueur, rum, or cognac 1 1/2 c flour, sifted 5 T melted butter

Step 3WINE & CHEESE SAUCE: 1/3 c dry white vermouth 2 T cornstarch + 2 T milk 1 1/2 c heavy cream 1/4 t salt white pepper 1/2 c grated swiss cheese
