cornmeal, self rising
I read tons of blogs and I cringe every time I see "self rising cornmeal" in a recipe. Why? Because I know that the cmments will say what is that, no clue, can i use Jiffy mix, how bout corn bread mix. Most Southerners know what it is and would never use Jiffy mix cause that is more like a cornmeal cake. No wonder there are now mixes for cornbread, mixes for pumpkin bread, mixes for just about everything, because we are losing the ability to cook anything if it does not come from a box and what a big old shame that is. Self rising cornmeal is NOT cornmeal mix which has flour added.

Ingredients
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup +3 tablespoons cornmeal
