My mom taught me years ago how to make cornbread, I have never thought about a recipe until someone was in need of one, so here is my cornbread recipe and I will add an option to it for sweet corn bread. Thanks Joan :) Photo will be provided by Joan Klimkowski

Ingredients

  • 2 cups cornmeal
  • 1/2 cup self rising flour
  • 1-2 cup buttermilk
  • 1 - eggs
  • 1/2 cup cooking oil
  • 1/2 -1 cup honey (optional) if you want sweet cornbread
  • 1/2 teaspoon salt (optional)

How To Make cornbread (kat's)

  • Step 1
    Preheat oven to 400. Use an iron skillet or muffin pan.
  • Step 2
    In a mixing bowl add cornmeal, flour, egg and oil. Start adding buttermilk until you get it the consistency that you want ( I make mine just a little thicker than pancake batter). Pour batter into a well greased iron skillet or well sprayed muffin pan.
  • Step 3
    Bake 12-15 minutes until golden brown. Brush with melted butter when you remove from oven. If you want sweet honey you c an add the honey. Or oh heck just drizzle over a hot piece after it's done :)
